The third meal was Gapao rice with Okinawan tofu and no sugar.

Add plenty of rice oil to a frying pan and heat. Tilt the frying pan, gently add the eggs, and fry until the edges of the whites are charred. Make 3 pieces.
Remove from the frying pan and fry 2 cloves of minced garlic and 2 crushed island chili peppers with a knife. Once the garlic turns brown, stir-fry 250g of chicken breast cut into 1cm cubes with salt and pepper. When the color of the chicken changes, add half a piece of island tofu cut into 1cm cubes. Water will come out from the island tofu, so season with 3 tablespoons of fish sauce and 2 tablespoons of oyster sauce. Once the water has evaporated, stir-fry the green peppers and paprika, and finally add the basil and stir-fry quickly.
What I wanted to recreate this time was a shop that used to be in front of Santitham Rotary, but has since moved to the left, and serves porridge and Thai food that is not too sweet. Salapao (meat bun) too.
We made a slight change to it by using island tofu, and the flavor was comparable without sugar. A dish that blends so well with the sauce and basil that you won't be able to tell the difference between chicken and island tofu.
