The first meal is Tom Yam Kung Noodle with a clear flavor.
Ingredients
Shrimps
Senmee noodles
bean sprouts
Maitake mushrooms
Chinese cabbage
Fish paste
Green onion
peanuts
Seekwasa (substitute for manau)
Tom Yum paste
Sala Tom (substitute for Pao)
fish sauce
For 3 servings
Dissolve 4 tablespoons of tom yum paste, 3 tablespoons of fish sauce, and 1 teaspoon of sala tom in 800 ml of boiling water, add shrimp, maitake mushrooms, and ground fish, and simmer for 5 minutes. Add 3 tablespoons lemon juice and turn off the heat. Put boiled senmee in a bowl, add boiled bean sprouts and Chinese cabbage on top of it, and pour tom yum soup with shrimp and other ingredients. Finally, top with green onions (I couldn't find pak choi) and squeeze lemon over the top.
Unlike the red tom yum kung noodle with coconut milk and seasoning oil, this tom yum kung noodle has a more sour and clear taste.
The restaurant I wanted to reproduce this time is a noodle shop in the middle of the food court in the basement of Maya in Chiang Mai. I ordered tom yum, sen mee, and fish balls. The noodles are less spicy and easy to eat, and feature Chinese cabbage. I was concerned about the difference in noodles this time, but it was my favorite dish as it warmed my body slightly.
